1 YEAR!!!

I  seriously can’t believe it, today marks my one year since deciding to go vegan! This has definitely been the best decision I have ever made, even though it has definitely not been easy I could never see myself going back and I never want to.  Starting this blog has definitely been an inspiration for me to be more active in the vegan community and to do more things to help are little animal friends. I can’t for more great vegan years to come!

Christmas lunch
I don’t know about you guys, but for my family Christmas day is usually leftovers from Christmas Eve. So this here was my super yummy lunch.
peas, corn, sweet potato, and tomato and onion with salt and pepper and olive oil and vinegar drizzled on top.
A nice refreshing light lunch for my overindulgences the previous night.

Christmas Dinner 

Sorry for the delay in posts, but I do have a lot of my holiday meals lined up for you guys.

My Christmas dinner involved a tofurkey roast (delicious), sweet potato (my favourite), pomegranate, a single serving of vegan stuffing that my mom made for me (so sweet), mediterranean style vegan ravioli with a fresh tomato and basil sauce, mashed potatoes (skins mixed in), and some peas and corn.

Yes, I had multiple servings….. Don’t judge.

Wing Night
A quick easy classic bar meal made vegan!
This meal seriously hit the spot and I couldn’t believe how good it tasted! I don’t remember what meat tastes like anymore, but I think this came pretty darn close!
I used the Gardien BBQ Wings and they only took like 7 minutes on the stovetop! As a side I had broccoli, cauliflower, and cherry tomatoes.

Pasta and homemade Basil Pesto with hot sauce
Vegan pasta with a homemade nut-free, cheese free pesto!
Pesto: Fresh basil, squeezed lemon, olive oil, salt and pepper, 3-diced cherry tomatoes, all blended in a food processer (I used my magic bullet).
Super yummy and filling meal and only took a few minutes to make, I only wished that I added some fresh veggies to the mix! I will definitely be doing it next time!

The Vegan Struggle

Okay rant time, I am actually so enraged right now I cant even. There is this girl in my communications class that is the biggest hypocrite and I cannot wait until April (the end of our program, YAY graduating!) so I can call her out on it! She Claims to be the biggest Animal Right supporter ever, she works at vet, adopts animals, and now she is doing a speech in one of our communications classes about animal cruelty (preventing me from being able to…**le big angry sigh..). Here is the kicker though…She wears Uggs, She eats all kinds and every kind of meat, and has no problem eating that ice cream and drinking that milk. It actually physically pains me and gets me so worked up that she says how she is against animal cruelty and supports Animal Rights, and yet she supports and contributes to the biggest animal cruelty industry ever!!

Now I get to sit and listen on Tuesday morning to hear her preach about animal cruelty and how bad it is while she is being the biggest hypocrite ever, and all while I am trying not to laugh and scream at her.

I mean how can you preach and then eat?!

If you lovely people have any advise or opinions, I’d love to hear!

P.S. I wrote this very quickly and didn’t have time to proofread really as I am off to sleep (try to at least) so I apologize in advanced for any major grammatical errors!

P.P.S I though I would note that my topic is environmental law issues, and I have major plans to incorporate factory farming and there impact on the environment ;) Again if you have any input on points I should hit for this presentation please feel free to add, I’d love to hear from you guys!!
